Elaine joined the Royal (Dick) School of Veterinary Studies in February 2019 as Coordinator of the online MSc Global Food Security and Nutrition programme. She has a BSc (Hons) Dietetics (Leeds, 1993) and a PhD looking at identification of nutritional risk of non-institutionalised older adults (The Open University, 1998). Postdoctoral work at The University of Edinburgh included exploration of health related quality of life of individuals requiring nutrition support, and also aspects of disease, appetite and food intake. Her research interests have remained in the areas of nutritional risk and health-related quality of life, food access, lifestyle behaviours.
Elaine has over 20 years of experience in learning and teaching from across the UK and Australia in both undergraduate and postgraduate higher education including Programme and Course leader, PhD and MSc supervisions and examinations. She has developed a variety of learning resources for a range of health care professionals and students including nutrition, medical, nursing and biological sciences for face to face, blended and also online learning. Prior to joining the R(D)SVS , she was joint-lead for the Nutrition Theme for the MBChB Medical Programme University of Dundee, and also led on the development of a new nutrition curriculum and learning resources for the SCOTGeM PG Medical Programme (St Andrews University). Her expertise includes nutritional assessment, diet across the life-cycle, diet and non-communicable diseases.
Elaine has worked with a number of third sector and voluntary groups including the Cyrenians, Ormiston Grows, NHS Lothian Public Health, Pilton Community Health Partnership, Coeliac UK, on a variety of knowledge exchange activities including needs assessments, food mapping, food access, inequalities, disease awareness raising, development of gluten-free cooking skills.
Elaine has been an invited member for a number of local and national committee and working groups, including Scottish Cross-Parliamentary Group on Coeliac Disease (2009 -2011), Advisor - NHS Health Improvement Scotland Improving Nutritional Care Advisory Group (Sept 2010-July 2011), Lothian AHP Generic Clinical Outcome Measures Working Group (April – July 2012); Lothian NMAHP Clinical Academic Research Scheme (CARC) Steering Group (Jan 2011 – April 2015); Steering Group for procurement of a National Nutrition Database for NHS Hospitals in Scotland (Health Facilities Scotland) (Mar 2009 – Sept 2010). She was Food & Nutrition Advisor to the Scottish Government for the development of Nutrition standards for food provision in hospitals (2007 - 2008).
